Chocolate with Salted Caramel Frosting & Red Velvet Cupcakes

I spent late last night and early this morning baking up these batches of cupcakes for my hair salon, Salon Lavena, which was selected for the “50 States Tour, Patrick Lomantini’s Ultimate Road Trip to Help Homeless Animals ” benefiting the Concord-Merrimack County SPCA today.  I went with my red velvet recipe I’ve been using since I first started which I found off of the “Karen in the Kitchen” blog that uses a hybrid recipe from Magnolia’s and Sprinkles –  I don’t use the cream cheese frosting but instead use the frosting recipe that I provided in my previous post.  I also decided to do a chocolate cupcake with a salted-caramel frosting that I found from Sally’s Baking Addiction but only used her recipe for the frosting, not the chocolate cupcake.  They came out really well, except I scooped a little too much of the chocolate cupcakes in each liner so I only ended up with 18 really big cupcakes and I didn’t let the caramel cool enough before adding to the powdered sugar so when it came time for piping, I had my first ever bag-break in the middle of frosting.  Fortunately, I had just enough frosting after I recovered it all and transferred into a new bag (after cooling first).   After sending some cupcakes off to Make-A-Wish NH for their Rafting for Wishes fundraiser on Wednesday and now this today, I’m feeling very philanthropic.  Enjoy!
